unbolt the exhaust before the cat and see if that helps flow? clogged cat? pretty unlikely it jumped timing, but it is possible... any idea when a new timing chain(if ever done) was put on?

It's running super rich, which would lead me to CTS or knock sensors, if you've got the cats removed.

coolant temp sensor

Also turn the key on let the pump prime, do not start it and check the fuel pressure. if its not holding and dropping off quick then you have a bad FPR leaking through the vac line, or you have a stuck open injector.

You could also have a bad ignition system causing multiple cylinder misfires which then results in excess un-burnt fuel on the plugs.

knock sensor will not cause these issues, save yourself the time. I drove to Chicago with mine unplugged due to false KR issues.

Good to know.

The OBD-I systems still don't make a lot of sense to me. I'm more familiar with all mechanical engines or OBD-II full computer control

You have a rich condition... You need to check everything fuel related as well as ignition and SCAN the ecu to see what the sensors are reading to pinpoint this. Without data it's just sensor after sensor that we will suggest.

I'm guessing bad ICM resulting in multiple cylinder misfires which is dumping fuel in the exhaust glowing the cat as well as polluting the oil with fuel because it's washing the cylinders with it.
